so, in the midst of life’s craziness, i forgot a friend’s birthday. i even talked to him the morning of his birthday and still did not say a word, completely wrapped up in my own mind’s thoughts. when i realized a few days later, i felt really bad. so, when they invited our family over for dinner last nite, i told him to tell me his favorite sweet so that i could make it for him. ummmm, just for a future FYI, that is a question one should really avoid asking a chef from London. he responded chocolate souffle or nougatine parfait covered in passionfruit sorbet and candied zest with a croquillant of caramel with peach coulis. i have to admit i think a certain four letter word came out of my mouth when i read his request. BUT, i decided i was up for the challenge, i also decided chocolate souffle only had two words, so that it must be easier and i did not want him going easy on me, so i went directly to the computer and googled all of those other words to find out what in the world they were and how they all could end up together. well, after some serious searching and investigating, a trip to lazy acres, a trip to trader joes and a few compromises due to the fact that unless i could contact marco pierre white or gordon ramsay directly, i was not going to be privy to certain recipes, i was ready. and thank goodness my mother in law was in town to help. so after two days and lots of fun in the kitchen, this is what we came up with! and it was yummy. and he was pleasantly surprised. oh, and i think i have been forgiven. . .
we used this recipe to make the nougatine and parfait, substituting passion fruit sorbet for the raspberry sorbet
we used this recipe to make the peach coulis
we used this recipe to make the orange zest
we would have used this recipe to make the passion fruit sorbet, if lazy acres had not had this beautiful container calling to me from the freezer section
oh, and then we used those yummy waffle caramel filled cookies from trader joes since the word croquillants (sp?) does not appear anywhere on the www.
